Ayurvedic Fig Jam
Figs, also known as "Anjeera" in Ayurveda, offer a multitude of health benefits. They are considered a rejuvenating substance that nourishes the body and boosts vitality. Figs aid digestion, stimulate the digestive fire, and promote healthy bowel movements. Additionally, they are recognized as a potent aphrodisiac, supporting reproductive health and vitality. With their cooling properties, figs help balance Pitta dosha, soothe inflammation, and provide relief from heat-related conditions. Moreover, figs have a unique ability to nourish bodily tissues, particularly muscle tissue, enhancing strength and promoting tissue regeneration.
Ingredients:
2 kg fresh figs
6 cloves
2 teaspoons anise seeds
Juice of 2 small lemons
450 grams jaggery (unrefined sugar cane)
Instructions:
Prepare the figs: Wash the figs thoroughly and remove the stems. Slice them into thin slices.
Cook the figs: Place the fig slices in a large saucepan or pot. Add the cloves, anise seeds, lemon juice, and jaggery. Mix well to combine all the ingredients.
Simmer the mixture: Over medium heat, bring the fig mixture to a gentle boil. Reduce the heat to low and let it simmer uncovered, stirring occasionally, for about 2-3 hours or until the figs have softened and the mixture thickens.
Test for doneness: To check if the jam has reached the desired consistency, place a small drop of the jam on a chilled plate. Tilt the plate slightly. If the drop slides down quickly like water, it is not ready. If the drop slowly slides down or holds its shape, it is ready. If not, continue simmering for a little longer and repeat the test.
Sterilize the jars: While the jam is cooking, sterilize the jars and their lids by washing them in hot, soapy water, rinsing thoroughly, and placing them in a preheated oven at 120°C (250°F) for about 15 minutes. Alternatively, you can use a boiling water bath method to sterilize the jars.
Fill the jars: Once the jam has reached the desired consistency, carefully pour it into the sterilized jars while they are still hot. Leave about 1/4 inch of headspace at the top of each jar.
Seal the jars: Wipe the rims of the jars with a clean cloth. Place the lids on the jars and tighten them securely.
Cool and store: Allow the jars to cool completely at room temperature. As they cool, you may hear a popping sound, indicating that the lids have sealed properly. Once cooled, store the jars in a cool, dark place such as a pantry or cupboard.
Enjoy your fig jam: The jam can be enjoyed immediately, but the flavors will continue to develop over time. It can be stored for several months in the pantry or refrigerated for longer shelf life.
